Turkey for me… Turkey for you

Wow, where did Thanksgiving run to? No sooner did it get here before the 4 day break was over and I was back to work. Great thing is… you know you like your job when your not pissed at the idea of having to go in on Monday. I had no ill-will feelings and was ready to get back into my daily routine.

As much as we enjoyed hosting 5 guest this past weekend, we really are relieved to be by ourselves again. Is that bad? I mean, we really don’t see people that often but after a certain amount of time passes you just want to be able to … walk around in your undies again. That’s a figure of speech since I usually wear pj pants but if you think about it, how REAL are you when people are visiting.

You go out of your way to make them comfortable, you make the breakfast of champions instead of your normal Corn Pops, you find time to use the bathroom when you think no one’s paying attention…. I mean really… how normal do we act when visitors are around.

Last week I had listed some recipes that I was trying and can say that two out of three were a success!

 

Pumpkin Cheesecake Shooters

These were so delish- minus the nutrish. Each serving was about 100 Calories so they are a SCORE in my book! I was so full after eating that I really didn’t care for a slice of apple pie but these babies we just enough for me to be satisfied with a full course meal.

This recipe was kick-ass! Super duper yummy and I used all the left over’s for brunch on Saturday. They went well with Eggs, and bacon. Yummy yummy.

 

Where I completely missed the boat was with baking Bread. I don’t know what happened! I did a test run on Wednesday with this recipe and it flopped. They were completely inedible.

Then I tried a friends recipe and I tasted some dough before baking them and the dough was really good but then the rolls came out super dense and tasted too much like dough.

These hands weren’t made for baking… and I’ve know this fact for many years. My mom can even attest to the idea that “Brittany will not be a baker when she grows up”. The only thing I bake… and bake well are Brownies. Ooie-gooey every time!

 

Now, where I was completely terrified of screwing up was with the turkey. They put so much pressure on it being the Star of the meal that how can you not freak! I was so amped up that I put the turkey in a 7:45am. I checked it for the neck and pulled it out… but for some reason there were no Giblets to be found. Well, I guess they forgot them in this turkey. I got it into the oven and called mom and to find out… yes the giblets were in the turkey. Did you know they have two holes that they hide that crap in! No one told me about the two holes! Thanks mom for saving the day once again.

 

Other than that, Turkey day was a success. I hope you all enjoyed it as well. :)

Recipe List for this Thanksgiving

I am plotting my Thanksgiving Feast and came across some A-Mazing recipes that I thought I would share.

I am NOT yet the baker but that’s what Bakery’s are for which is where I am getting my pumpkin and apple pies. However, I came across a recipe for pumpkin shooters that I know I can make successfully! And really, how FUN are they!

Skinny-Taste.com is one of my fav. recipe spots on the web because she always makes healthier food but the way I prefer it… which is the same as it normally is but without the calories. They never taste like “health” food… if I wanted to eat Tofu I would… but I don’t so SkinnyTaste.com it is!

This year I will also be attempting to bake my own bread. I came across this link for “Tasty Buns” .. Don’t they look TASTY. The recipe also looks fairly simple for a newbie bread baker.

Next on my list to try are, Steak House style Au Gratin potatoes… requested by my husband. I figured lets try something else instead of the … no shocker … mashed potatoes.

Other then these items, are Feast will consist of the usual… Turkey (that I hope doesn’t over cook), Green bean casserole, apple sauce, Deviled eggs, Celery/carrots & dip, followed by a dessert of Pumpkin, or apple pie.

I feel like I am missing something… oh well, must not be super important if it’s not on my list. Hope you enjoy the recipes.

Simply Adapting Questionnaire: Part Two

Today, I decided to update some items in my blog, such as the "My Story" page. It was really fun to look back after 5 months of living in Iowa to come up with new answers to my previous questionnaire. I loved reading back to my South Dakota Questionnaire as well.

{ What are some things I felt that I had to adapt to in Iowa }


After living in South Dakota for two years I got use to the wide open spaces unlike back east. The difference this time with our move is that we live in the middle of nowhere, where as, back in SD we lived right out of town. We live on a little 14 acre spread with a house, 3 barns, and 2 tractors... and counting. FUN! We are the only house on a mile stretch of dirt road and our closest neighbor is a 3rd of a mile away down the next road... or across the section. I have learned to plan ahead with shopping. Our grocery store is in the next town which is a 15/20min drive. Now that I work in Ames, it's easier to grab items on the way home.

We love our "neighborhood" or surrounding neighbors. We actually know them this time around! YAY! In Mitchell, we didn't know anyone who lived near us and it didn't seem that they cared to know us either. Now we see neighbors at the store, at events, and auctions. It's so nice to walk over and greet with a "howdy neighbor". It makes living somewhere feel like you belong.

{ What advice can I give to readers in simply adapting to your new home? }

#1: I'm still a believer that, it can always be worse! You have your health and people back home to support you whether its on a phone call once a week, skyping, or facebooking. Communication has grown so much that keeping in touch isn't like mailing a letter once a month.


#2: Meet People: I try and make a point to visit with neighbors when I see them. It really does make it nice to know the people around you.


#3: Find a hobby & try new things! This time around I joined a quilting class and plan to join the ISU gym and take classes.


#4: Explore! We LOVE LOVE LOVE farm auctions. They are a great place to see people you know or in our case most the time... people WATCH. Sometimes you have score a great buy as well.

#5: Do what makes you happy not what is always convenient. If I decided to stay in my old job and work from home I would be miserable. It make be less convenient to commute 30 minutes but I am a happier person for it!

{ What are some fun tips and tricks I have learned from living in Ogden, IA }

I have learned about "Walking Tacos", the difference between saying "Iowa" and "Iowa State" as in the Universities, that its much more fun to watch College sports then professional, that political adds begin before the Iowa Caucus and don't end until November, girls here in Iowa wear "badazzled" jeans just like in South Dakota... I don't get it. 

{ Local Recipe }

I got so much crap for not knowing that these were....

Walking Tacos

    


 

Ingredients:

1 pound ground beef or turkey

1/2 cup diced onion

1 (1 ounce) taco seasoning packet (or this homemade taco seasoning)

6-8 snack sized bags of Fritos or Doritos


Suggested Toppings:

black beans

lettuce

tomato

shredded cheese

sour cream

ranch/salsa mixture (1:1 ratio prepared ranch dressing and your favorite salsa)


Instructions:

Brown beef or turkey and drain the fat. Add the onion to the meat and saute a couple of minutes until soft. Add the taco seasoning along with 1/2 cup of water and simmer until water is absorbed. If serving immediate pour in a bowl. You can also combine the meat and black beans if you want and keep them warm in a slow cooker.


Crush your chips with your hands and open your bag. Add whatever toppings you desire and eat with a fork as you walk around! I always drizzle it with my ranch/salsa mixture.

{ What are some things I felt that I had to adapt to in South Dakota }



I really had to adjust to how open it is out here compared to Delaware. There are more cows then there are people here in South Dakota so the towns are far and few between. I felt at first like I would never meet anyone since I was the outsider but then I got a job subbing in the Mitchell School District and it lead me to talking to people! I had missed that so much, I am what they call a social butterfly so I was itching for some contact. Another adaption I had to make was to the weather. Delawareans are weenies when it comes to weather, it gets to 30 degrees and an inch of snow on the ground and we freak, I was one of them. My first winter was last year and it hit -20 one night! Some of the highs for the day were in the single digits, and snow... oh that snow! Lets just say there was a lot! Once I got through my first winter I've been fine, the locals like to say that you kind of forget about how it was the year prior (Probably because they are bad memories) but really you do just forget about it and deal with it as you go. People here are polite, traffic is almost non existent, and the lifestyle is more relaxing.



{ What advice can I give to readers in simply adapting to your new home? }



#1: It can always be worse! You have your health and people back home to support you whether its on a phone call once a week, skyping, or facebooking. Communication has grown so much that keeping in touch isn't like mailing a letter once a month.



#2: Talk to people: Whether you just started a new job or are in the check out line in the local town grocer. People love hearing how I am from Delaware and asking how I am doing here. You never know, it could lead to a new friendship or just someone who had a nice conversation with you that made your day.



#3: If you are alone a lot get a pet. Winston is my savor. I think sometimes people think I am overly attached to my dog but really he is the one that helped me get through my first few months here in South Dakota. My husband travels frequently for work so Winston is my lil man that I can take on walks or snuggle with at night.



#4: Find a hobby & try new things! Since living here I have read more then I have in 3 years back home, I can knit better then ever and I'm still learning, and my cooking skills are growing.



#5: Explore! My husband and I love to drive around and find neat things at the towns in the area. We have visited Mt. Rushmore 3 times now, have been to the Bad Lands National Park twice, and have been snowmobiling for our first time ever! I couldn't do these things back in Delaware and I'm glad I did them now seeing how we are moving to Iowa in a few months.



{ What are some fun tips and tricks I have learned from living in Mitchell, SD }



I have learned to plow a driveway with a four-wheeler... I have grown in my faith more being here ... I learned that there is a distinct difference between East River and West River... I learned what a "Jersey Chaser" is .... along with a "Pick" :)



{ Local Recipe }



Deep Fried Pheasant



What you need: Pheasant breast, eggs, canola oil, 2 cups flour, 2 tbl spoons seasonal, 1/2 packet ranch dressing mix, salt and pepper to taste



Directions: Cut Pheasant breast into smaller nuggets, dip in beat-ed eggs, then into mixture of flour, seasonal, and ranch dressing mix (do this twice for think crust)



Place nuggets into hot oil on frying pan. If not fully submerged flip after 1 minute

Watch not to over cook nuggets; pheasant dries out quickly.



Serve with: Green Olive Tomato Beer ;)

Hello Lady… it’s been too long

.. Alert the blogger universe…

This chick is still alive!

I have been so busy that I have completely neglected my blog space. Yes, I have thought about posting multiple times in the past 2 months and when it came down to it, I was LAZY and decided relaxing on the sofa was way more important. (don’t act like you haven’t)

To get you all up to speed…

On October 10th I started my new job at Iowa State University. LOVE IT! It is such a breath of fresh air to get out of the house every day. I don’t want to say that I am a routine person because I’m certainly someone who you can ask to go to get a drink on a whim and it doesn’t need to be planned. However, do I like having something to look forward to every day, ABSOLUTELY! I actually do like getting up at 6am, taking my shower, picking out a cute outfit for the day, driving to work, and … wait for it… TALK TO PEOPLE AGAIN! I am back in the world of socialization and am loving it.

ISU is such a big campus compared to my little alma mater Del Val. It is certainly overwhelming at first but once you get past that it’s amazing to see the people that make this place work and its rejuvenating to see the mob students hustling to class at every hour on the minute. This place is a well oiled machine and I can’t help to feel so blessed to work here.

I even think my marriage has benefited. Happy Wife = Happy Life. Totally and completely true! I wasn’t miserable when I was working at home and I never took it out on {G} but there was something missing in my daily need column. By the time {G} would get home from wotk at 7pm he was ready to wind down, mean while, I had been anxiously waiting like a little puppy dog at the window for my only source of human contact to pull in the drive way. This certainly can be frustrating for both parties.

Now, I get home by quarter ‘til 6pm most days. Let the dog out and try to soak up whatever day light is left. Sit for a minute to collect my thoughts and the 6pm news. Start supper. By the time I’m done {G} is walking through the door and we are both ready to relax. PROGRESS

I’d be lying if I said there weren’t things that I didn’t miss about working from home, but the list is pretty limited.

  1. Watching LIVE with Kelly & Michael (LOVED THAT SHOW!)
  2. Spending the day with Winston
  3. Freedom to do whatever I wanted whenever

Yeah… that’s all I can think of… Thing that I have gained

  1. The Elvis Duran in the Morning Show  I have a 30-35 minute ride to work in the morning and just love listening to the morning show I use to listen to while living back east. Makes it feel like I’m (Home-Home) As for my title to this post… Hello Lady is a line from the morning show. HI-OH!
  2. Dressing up for work – When I was at home what was the point… every day I threw on chore jeans, a t-shirt, and threw my hair in a pony tail. Now I can pick every day! The best part is that my office is very business casual so it’s not like I have to pick out dress slacks every day.
  3. Socialization – Talking to people. LOVE it!
  4. Working with Students – I’m now back in a position where each week I’m in the middle and high schools working with the SAME students each month. I was blessed with a gift to work with youth and now feel that I am utilizing that gift for the better.
  5. Self-respect of myself – I never want to SETTLE for a job. I set out to be an educator and now when people ask what I do I can be proud to say that I’m educating students to go onto college.

I hope all of you feel the same way about where you are in your lives and can’t wait to share more!
